Industrial homogenisers: definition and operation
Homogenisation plays a fundamental role in the food industry. It uses pressure to subdivide liquid particles as small as possible at the submicron level, creating stable emulsions, ideal for further processing or product delivery.
In piston homogenisers, a compression block, consisting of one or more piston pumps, pumps the product through a purpose-designed valve. The dynamic flow and the high velocity achieved in this step generate the micronisation of the particles by turbulence, cavitation, shear force and impact. The process is carried out in one or two stages, depending on the product to be processed. The piston can operate electrically or hydraulically and can include heating or cooling, depending on the characteristics of the process and the products.
Homogenisation can be carried out at medium or high pressure. High-pressure homogenisers are used when high process efficiency is required.
Application of industrial homogenisers
Industrial homogenisers are used to stabilise fat emulsions in water and to disperse solids in aqueous solutions, avoiding phase separation. Using them will allow you to increase the shelf life of the product, increase its viscosity, improve its taste and reduce the use of thickeners and stabilisers.
All dairy products use two-stage piston homogenisers for milk treatment, which prevent fat separation in the final product, preventing the milk from skimming. In addition to pasteurised milk, milk cream, cheese, and liquid yogurt, many other products can be produced. Dressings, ice cream, fruit juices, margarine, tomato products, liquid soap, and detergents are all examples of possible applications.
Laboratory homogenizers, which employ very high pressures, are used for the study and formation of stable nano-emulsions in pharmaceutical and food applications.
